Diabetes-friendly lunch

Tofu & Vegetable Stir-Fry

Tofu is an excellent plant-based protein that is low in saturated fat and contains no cholesterol. This stir-fry emphasizes high-fiber vegetables like broccoli and snap peas, which slow the absorption of the small amount of natural sugars found in the vegetables. It is a light yet protein-dense lunch option.
